Begin by slicing the everything bagels into thin rounds, about 1/8 inch thick. This will ensure they get crispy in the air fryer.
In a large mixing bowl, combine the olive oil, garlic powder, onion powder, sesame seeds, poppy seeds, flaky sea salt, and dill (if using). Mix well to create a spiced oil blend.
Add the bagel slices to the bowl with the oil mixture and toss gently until all the bagel pieces are evenly coated.
Preheat your air fryer to 350°F (180°C) for about 3-5 minutes.
Once preheated, arrange the bagel slices in a single layer in the air fryer basket. You may have to do this in batches depending on the size of your air fryer.
Air fry the bagel slices for about 5-7 minutes, flipping halfway through, until they are golden brown and crispy. Keep a close eye on them, as they can burn quickly.
Once done, remove the chips from the air fryer and let them cool on a wire rack. This will help them maintain their crispiness.
Repeat with any remaining bagel slices.
