Beefy Melt Burrito
A delicious burrito filled with seasoned ground beef and melted cheese, served with sour cream and guacamole.

Instructions
In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent and fragrant, about 3-4 minutes.
Stir in the chili powder, cumin, paprika, salt, and pepper. Mix well and let the spices cook with the beef for another 2 minutes. Remove from heat.
Preheat your oven to 350°F (175°C).
Lay out a tortilla and spoon a generous amount of the beef mixture in the center, followed by a handful of both the cheddar and Monterey Jack cheese.
Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to enclose all the ingredients.
Place the burrito seam-side down in a baking dish. Repeat this process for the remaining tortillas.
Once all the burritos are in the dish, sprinkle the remaining cheese on top.
Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and slightly bubbly.
Remove the burritos from the oven and let them rest for a few minutes.
Serve topped with a dollop of sour cream, guacamole, and a sprinkle of fresh cilantro.
