In a bowl, combine the shredded chicken with Cajun seasoning until evenly coated. Set aside.
Roll out the pizza crust on a floured surface to your desired thickness, then transfer to a baking sheet or pizza stone.
Brush a thin layer of olive oil over the pizza crust for extra crunch and flavor.
Spread a generous layer of Alfredo sauce evenly over the pizza crust, leaving about half an inch of crust around the edge.
Sprinkle half of the mozzarella and Parmesan cheese over the Alfredo sauce.
Spread the seasoned Cajun chicken evenly across the pizza.
Arrange the sliced bell pepper and red onion over the chicken, then add the remaining mozzarella and Parmesan cheese. If using, scatter the olives on top.
Bake the pizza in the preheated oven for 12-15 minutes, or until the cheese is melted and bubbly, and the crust is golden brown.
Once cooked, remove the pizza from the oven and let it cool for a couple of minutes.
Garnish with fresh parsley before slicing.
