Cook the penne pasta according to the package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
Stir in the minced garlic and sauté for another minute until fragrant.
Add the shredded chicken, broccoli florets, cherry tomatoes, Italian seasoning, salt, and pepper to the skillet. Cook for an additional 5-7 minutes until the broccoli is tender.
In a large bowl, combine the cooked pasta with the chicken and vegetable mixture.
Stir in the ricotta cheese and half of the mozzarella cheese, mixing until everything is evenly coated.
Transfer the mixture into a greased baking dish. Sprinkle the remaining mozzarella cheese and grated parmesan cheese on top.
Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
Once done, remove from the oven and let it sit for 5 minutes before serving.
Notes
Serve in individual bowls and garnish with fresh basil and additional parmesan if desired.
