Open the can of cinnamon rolls and separate them. Cut each roll into quarters and set aside.
In a mixing bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, maple syrup, and salt until well combined.
Dip each quarter of cinnamon roll into the egg mixture, ensuring it’s fully coated but not soaking. Allow excess batter to drip off.
In a large skillet, melt the butter over medium heat until it is bubbling but not burnt.
Add the coated cinnamon roll bites to the skillet in a single layer (you may need to do this in batches). Cook for about 2-3 minutes on each side, or until golden brown and cooked through.
Once cooked, place the French toast bites on a serving plate.
Lightly dust the bites with powdered sugar and serve warm with maple syrup drizzled on top.
