Instructions
Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with olive oil spray or butter.
In a large bowl, combine the cottage cheese, chopped spinach, diced bell peppers, chopped zucchini, and halved cherry tomatoes.
Crack the eggs into the vegetable mixture and gently beat them until well combined.
Add in the garlic powder, onion powder, dried Italian herbs, salt, and pepper. Mix everything until the vegetables are evenly coated.
Pour the mixture into the prepared baking dish, spreading it out evenly.
Sprinkle the shredded cheese over the top of the veggie mixture.
Bake in the preheated oven for 30-35 minutes, or until the top is golden and the edges are bubbling.
Remove from the oven and let it cool for a few minutes before cutting into squares.
Notes
Serve warm, garnished with fresh basil or parsley. Pair with a side salad for a colorful meal!
