ground turkey or beef

black beans, drained and rinsed

can (15 oz)
corn, drained
1
can (10 oz)
diced tomatoes with green chilies

packet
taco seasoning

tortilla chips, slightly crushed

shredded cheese (cheddar or Mexican blend)

bell pepper
diced (any color)
1
small
onion, finely chopped
1
cup
salsa
to taste
sour cream
to taste
avocado
to taste
sliced jalapeños
to taste
chopped cilantro
Instructions
In a skillet over medium heat, sauté the diced onion and bell pepper until softened, about 5 minutes.
Add the ground turkey or beef to the skillet and cook until browned, breaking it up with a wooden spoon. Drain excess fat if necessary.
Transfer the cooked meat and vegetables into the crockpot.
Add the black beans, corn, diced tomatoes with green chilies, taco seasoning, and salsa to the crockpot. Stir everything together until well combined.
Layer half of the crushed tortilla chips over the mixture in the crockpot, followed by half of the shredded cheese.
Add the remaining meat mixture on top, then finish with the rest of the tortilla chips and cheese.
Cover the crockpot and cook on low for 4-5 hours or on high for 2-3 hours, until the cheese is melted and bubbly.
Once cooked, carefully serve portions in bowls and top with optional toppings like sour cream, avocado, jalapeños, and cilantro.
Notes
Serve in individual bowls, garnished with fresh cilantro and a dollop of sour cream for a colorful and appetizing look.
