Instructions
Preheat your oven to 350°F (175°C) and grease a 9x13 inch casserole dish.
In a large bowl, combine the cubed bread, crumbled sausage, chopped spinach, and diced bell pepper. Mix well.
In another bowl, whisk together the eggs, milk, garlic powder, onion powder, smoked paprika, salt, and pepper until well combined.
Pour the egg mixture evenly over the bread and sausage mixture, ensuring all the bread is coated. Gently press down on the bread to ensure it absorbs the liquid.
Sprinkle the shredded cheddar cheese evenly on top of the casserole.
Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and the casserole is set in the center.
Let the casserole cool for a few minutes, then garnish with chopped parsley before serving.
