Instructions
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together using an electric mixer until the mixture is light and fluffy.
Add the egg and vanilla extract to the mixture and continue mixing until fully combined.
In a separate bowl, whisk together the all-purpose flour, baking powder, and 1/2 teaspoon of flaky sea salt.
Gradually add the dry ingredients to the wet mixture, mixing until just combined and a dough forms.
Scoop tablespoons of dough and roll them into balls, placing them on the prepared baking sheet, leaving space between each ball to allow for spreading.
Gently flatten each cookie ball with the palm of your hand and sprinkle a pinch of flaky sea salt on top of each cookie.
Bake in the preheated oven for about 12-15 minutes or until the edges are lightly golden.
Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
