Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, combine diced sweet potatoes, olive oil, smoked paprika, salt, pepper, and red pepper flakes. Toss until sweet potatoes are well-coated.
Spread the sweet potatoes evenly on a baking sheet lined with parchment paper. Roast in the preheated oven for 20 minutes.
While the sweet potatoes are roasting, heat a large skillet over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes.
Reduce the heat to low and add minced garlic to the skillet with the sausage, cooking for another minute until fragrant.
Pour honey over the sausage and stir to coat everything evenly. Cook for an additional 2-3 minutes, allowing the honey to glaze the sausage.
After 20 minutes, remove the sweet potatoes from the oven and add the sausage mixture on top. Gently toss everything together on the baking sheet.
Return to the oven and roast for an additional 15-20 minutes, or until the sweet potatoes are tender and caramelized.
Once done, remove from the oven and let cool for a few minutes before serving.
Notes
Serve the dish in a large bowl, garnished with freshly chopped parsley for a pop of color. Drizzle any remaining honey glaze from the pan on top for added flavor.
