Italian sausage, casings removed

Instructions
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
Add the garlic, stirring for another minute until fragrant.
Crumble the Italian sausage into the pot, breaking it apart with a wooden spoon. Cook until browned and cooked through, about 5-7 minutes.
Once the sausage is browned, add the sliced potatoes and chicken broth to the pot. Bring to a boil.
Reduce the heat and let it simmer for about 15-20 minutes, or until the potatoes are tender.
Stir in the chopped kale, heavy cream (or coconut cream), oregano, and red pepper flakes. Season with salt and pepper to taste.
Allow the soup to simmer for another 5 minutes until the kale is wilted and tender.
Serve warm, garnished with freshly grated Parmesan cheese if desired.
Notes
Use coconut cream for a dairy-free option.
