Instructions
In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
Stir in the minced garlic and diced jalapeños; sauté for another 2 minutes until fragrant.
Add the softened cream cheese to the pot and mix, allowing it to melt slightly.
Gradually pour in the chicken or vegetable broth, stirring until the cream cheese is fully incorporated and the mixture is smooth.
Add the corn kernels, ground cumin, smoked paprika, salt, and pepper. Stir to combine and bring the soup to a gentle simmer.
Let the soup simmer for about 10-15 minutes, allowing the flavors to meld together.
Just before serving, stir in the shredded sharp cheddar cheese until melted and creamy.
Taste and adjust the seasoning if necessary.
Ladle the soup into bowls and top each serving with chopped green onions and crispy tortilla strips for additional crunch.
