Instructions
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a large bowl, toss the carrot fries with olive oil, making sure they are well coated.
In a small bowl, combine the maple syrup, ground cinnamon, smoked paprika, salt, and pepper. Stir until well mixed.
Drizzle the maple mixture over the carrots and toss again to ensure each fry is evenly coated.
Spread the carrot fries in a single layer on the prepared baking sheet.
Bake in the preheated oven for 20-25 minutes or until the fries are golden and tender, flipping them halfway through for even cooking.
Once done, remove from the oven and let cool for a couple of minutes before topping with fresh parsley.
Notes
Serve in a rustic wooden bowl or on a slate platter, garnished with extra maple syrup and parsley.
