1lbbaby carrots, peeled (or regular carrots, sliced into sticks)
3tablespoonspure maple syrup
2tablespoonsunsalted butter
1tablespoonfresh lemon juice
1teaspooncinnamon

Instructions
In a large skillet, melt the butter over medium heat.
Once the butter is melted and bubbling gently, add the baby carrots to the skillet and cook for about 5 minutes, stirring occasionally.
In a small bowl, mix the maple syrup, lemon juice, cinnamon, salt, and pepper. Pour this mixture over the carrots.
Stir well to coat the carrots evenly in the glaze.
Reduce the heat to low, cover the skillet, and let the carrots simmer for another 10-15 minutes or until they are tender and the glaze has thickened slightly.
Remove from heat, and taste for seasoning; adjust salt and pepper if needed.
If desired, garnish with fresh thyme or parsley before serving.
