Instructions
Rinse the jasmine rice under cold water until the water runs clear. In a medium pot, combine the rinsed rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork.
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced onion and cook until translucent, about 3-4 minutes. Add the minced garlic and sliced bell pepper. Sauté for another 2-3 minutes until the pepper is tender.
Push the vegetable mixture to the side of the skillet and add the ground beef. Break it apart with a spatula and cook until browned and fully cooked, about 5-7 minutes. Mix the veggies with the beef.
Stir in the soy sauce, oyster sauce, sesame oil, salt, and pepper. Cook for another 2-3 minutes to combine the flavors. Taste and adjust seasoning if necessary.
In serving bowls, add a generous scoop of the fluffy jasmine rice. Top with the savory beef and pepper mixture.
Sprinkle chopped green onions and sesame seeds on top for a fresh finish.
