Cook the Noodles: Begin by cooking the rice noodles according to the package instructions. Once cooked, drain and set aside, tossing with a little sesame oil to prevent sticking.
Prepare the Marinade: In a bowl, whisk together the soy sauce, honey, rice vinegar, minced ginger, and garlic. Add the sliced flank steak and let it marinate for at least 15 minutes.
Sauté the Vegetables: In a large skillet or wok, heat the remaining sesame oil over medium-high heat. Add the sliced red bell pepper and chopped bok choy, stir-frying for about 3-4 minutes until the vegetables are vibrant and slightly tender. Remove them from the skillet and set aside.
Cook the Beef: In the same skillet, add the marinated flank steak (discarding any excess marinade) and cook for 3-4 minutes, until the beef is browned and cooked through. Season with salt and pepper to taste.
Combine: Return the sautéed vegetables to the skillet with the cooked beef. Add the cooked rice noodles and toss gently to combine everything evenly.
Serve: Divide the sesame ginger beef noodles among serving plates. Garnish with sliced green onions and sprinkle sesame seeds on top for an added crunch.
