In a large skillet, heat the olive oil over medium heat.
Add the chopped onion and minced garlic, sautéing until the onion becomes translucent (about 3-4 minutes).
Stir in the ground beef and cook until browned, breaking it up with a spatula, approximately 5-7 minutes. Season with salt, pepper, chili powder, cumin, and smoked paprika.
Add the diced sweet potatoes to the skillet. Stir well to combine, cover, and let them cook for about 10 minutes, or until they start to soften.
Uncover and add the diced bell pepper, black beans, and corn. Mix everything well and cover again for an additional 5-7 minutes to allow the sweet potatoes to cook through.
Once the sweet potatoes are tender, taste and adjust seasoning if necessary.
