Preheat the oven to 350°F (175°C). Grease an 8x8-inch baking pan or line it with parchment paper for easy removal.
In a mixing bowl, combine the flour and powdered sugar. Add the softened butter and mix until crumbly. Press this mixture evenly into the bottom of the prepared baking pan to form a crust.
Bake the crust in the preheated oven for about 15 minutes or until golden. Remove from the oven and set aside to cool slightly.
In a large bowl, whisk together the granulated sugar and eggs until well combined.
Add the Greek yogurt, fresh lemon juice, lemon zest, vanilla extract, cornstarch, and a pinch of salt. Mix until smooth and creamy.
Pour the lemon filling over the baked crust and spread it evenly.
Return the baking pan to the oven and bake for an additional 20-25 minutes, or until the filling is set and slightly firm to the touch.
Once baked, remove from the oven and allow to cool at room temperature. Chill in the refrigerator for at least 2 hours before slicing into bars.
Dust the top with additional powdered sugar before serving for a lovely presentation.
Notes
Serve chilled and garnish with fresh lemon slices or mint leaves for an extra touch.
